Vegan Foil Packet

Makes 1 foil packet

Ingredients:
  • Olive oil
  • Small eggplant, cut into ½-inch pieces
  • Small zucchini, cut in half and sliced
  • Diced tomatoes, drained
  • Garlic salt
  • Black pepper

Instructions:
  1. Lay out a piece of foil, and drizzle over a small amount of olive oil. Place all the vegetables in the center, and drizzle more olive oil. Season with garlic salt and pepper.
  2. Fold the long ends of the foil together, leaving room for steam to gather inside, and then fold the short sides in on each end.
  3. Cook the packet on the grill for 15 minutes.
  4. When the vegetables are tender, carefully open the packet, and season with more olive oil, garlic salt, and pepper, if needed.
