Sweet Potato Bites with Brie and Pear
Sure, these potatoes are loaded—with fresh ingredients and a sense of panache. Plus, the dish tastes as great as it looks!
Serves 6–8
Ingredients:
- 4 sweet potatoes, peeled
- 2 tbsp. olive oil
- 2 pears, peeled
- 2 tbsp. brown sugar
- 1 Brie wedge

Instructions:
- Preheat the oven to 375°F.
- Cut the sweet potatoes into 1-inch-thick slices. Gently puncture each one twice with a fork, brush both sides with the oil, and place onto a baking sheet in a single layer. Bake for 25–30 minutes, flipping halfway through when the potatoes begin to brown. Once they’re cool enough handle, use a 1½-inch circle cutter to trim each slice into round bites, discarding the excess potato.
- Cut the pears into small, thin slices, and place them on the sweet potato bites. Sprinkle with the brown sugar, and bake for an additional 10 minutes.
- Slice the Brie into small wedges, and stack one on top of each bite. Set the oven to broil, and broil for 2 minutes. Serve warm.
