Sweet Potato Bites with Brie and Pear

Serves 6–8

Ingredients:
  • 4 sweet potatoes, peeled
  • 2 tbsp. olive oil
  • 2 pears, peeled
  • 2 tbsp. brown sugar
  • 1 Brie wedge

Instructions:
  1. Preheat the oven to 375°F.
  2. Cut the sweet potatoes into 1-inch-thick slices. Gently puncture each one twice with a fork, brush both sides with the oil, and place onto a baking sheet in a single layer. Bake for 25­­–30 minutes, flipping halfway through when the potatoes begin to brown. Once they’re cool enough handle, use a 1½-inch circle cutter to trim each slice into round bites, discarding the excess potato.
  3. Cut the pears into small, thin slices, and place them on the sweet potato bites. Sprinkle with the brown sugar, and bake for an additional 10 minutes.
  4. Slice the Brie into small wedges, and stack one on top of each bite. Set the oven to broil, and broil for 2 minutes. Serve warm.
