Sweet Chili-Garlic Baked Ham

Serves 6–8

Ingredients:
  • ½ c. rice wine vinegar
  • ½ c. water
  • 1 c. granulated sugar
  • 3 tbsp. fish sauce
  • ½ c. ketchup
  • 6 garlic cloves, minced
  • 2 tsp. crushed red pepper flakes
  • 1 tbsp. corn starch
  • Spiral-sliced ham

Instructions:
  1. Preheat the oven to 350°F.
  2. In a medium-sized pot over medium heat, whisk together all the ingredients except for the ham. Bring to a simmer, cooking for 3–4 minutes, and set aside.
  3. Place the ham in a roasting pan. Coat it with the sauce, cover with foil, and bake for 30 minutes.
  4. Remove the pan from the oven, and increase the temperature to 425°F. Remove the foil, return the pan to the oven, and roast for 10–12 minutes or until the sauce caramelizes slightly and the ham is hot throughout. Serve warm.

Tip: You can adjust the spice level of this medium-heat recipe by increasing or decreasing the amount of red pepper flakes in the sauce. Use one additional teaspoon for more heat and one less teaspoon for a milder flavor.
