Summer Succotash

Serves 4

Ingredients:
  • 1 tsp. olive oil
  • 1 garlic clove, minced
  • 1 c. frozen lima beans, thawed
  • 1 c. green beans, chopped
  • 1 c. snap peas
  • 1 c. fresh corn kernels
  • 1 c. heirloom tomatoes, halved
  • ½ c. red onion, diced
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 tsp. fresh basil
  • ½ tsp. fresh dill

Instructions:
  1. Heat the oil in a large skillet over medium-high heat.
  2. Sauté the garlic, lima beans, green beans, snap peas, corn, tomatoes, and red onion for 5–6 minutes or until vegetables are tender.
  3. Season with salt, pepper, basil, and dill before serving.

Tip: Succotash is great served as a hot side dish or as a cold salad.
