Summer Succotash
This classic corn-and-lima-bean succotash is full of fresh summer vegetables like green beans, snap peas, and heirloom tomatoes seasoned with fresh basil and dill.
Serves 4
Ingredients:
- 1 tsp. olive oil
- 1 garlic clove, minced
- 1 c. frozen lima beans, thawed
- 1 c. green beans, chopped
- 1 c. snap peas
- 1 c. fresh corn kernels
- 1 c. heirloom tomatoes, halved
- ½ c. red onion, diced
- 1 tsp. salt
- ½ tsp. black pepper
- 1 tsp. fresh basil
- ½ tsp. fresh dill

Instructions:
- Heat the oil in a large skillet over medium-high heat.
- Sauté the garlic, lima beans, green beans, snap peas, corn, tomatoes, and red onion for 5–6 minutes or until vegetables are tender.
- Season with salt, pepper, basil, and dill before serving.
Tip: Succotash is great served as a hot side dish or as a cold salad.
