Summer Smash Burgers
Give classic grilled burgers an upgrade with this smash-style preparation and a special sauce that has just the right amount of zest.
Serves 4
For the special sauce:
- ½ c. mayonnaise
- 2 tbsp. yellow mustard
- 2 tbsp. sweet relish
- 1 tbsp. sriracha
- 1 tsp. garlic powder
- 1 tsp. onion powder
For the burgers:
- 1 lb. ground beef chuck
- 1 tsp. salt
- 4 slices American cheese
- 4 potato buns
Toppings:
- Shredded lettuce
- Tomatoes, sliced
- Pickles, sliced
- Red onion, sliced

Instructions:
- In a medium bowl, whisk together the special-sauce ingredients. Keep refrigerated until ready to serve.
- Preheat the grill to medium-high, and place a cast-iron skillet or griddle on top of it.
- Portion the ground beef into 4-ounce round balls, and season with salt.
- Place the burgers on the hot griddle or skillet, and press down on each using a metal spatula until smashed. Grill the burgers, flipping them once, for 4–5 minutes or until seared and cooked to your desired doneness. Top with the American cheese before removing from the grill.
- Spread the special sauce on the burger buns, and add the burgers and any desired toppings.
Tip: This sauce is so special that you may want to make more. It will keep in the refrigerator for one week.
