Summer Smash Burgers

Serves 4

Special sauce:
  • ½ c. mayonnaise
  • 2 tbsp. yellow mustard
  • 2 tbsp. sweet relish
  • 1 tbsp. sriracha
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
Burgers:
  • 1 lb. ground beef chuck
  • 1 tsp. salt
  • 4 slices American cheese
  • 4 potato buns
Toppings:
  • Shredded lettuce
  • Tomatoes, sliced
  • Pickles, sliced
  • Red onion, sliced

Instructions:
  1. In a medium bowl, whisk together the special-sauce ingredients. Keep refrigerated until ready to serve.
  2. Preheat the grill to medium-high heat, and place a cast-iron skillet or griddle on top of it.
  3. Portion the ground beef into 4-ounce round balls, and season with the salt.
  4. Place the beef balls on the hot skillet or griddle, and press down on each using a metal spatula until smashed. Grill the burgers, flipping once, for 4–5 minutes or until seared and cooked to desired doneness. Top with the American cheese before removing from the grill.
  5. Spread the special sauce on the buns, and add the burgers and any desired toppings.

Tip: This sauce is so special that you may want to make more! It will keep in the refrigerator for one week.
