Red Velvet Cookies

Makes 36 cookies

Ingredients:
  • 2¼ c. flour
  • 2½ tbsp. cocoa powder
  • 1½ tsp. cornstarch
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 8 tbsp. butter, room temperature
  • 6 tbsp. shortening
  • 1½ c. sugar
  • 1 egg, plus 1 egg yolk
  • 1½ tsp. white vinegar
  • 1½ tsp. vanilla
  • 1 tbsp. red food coloring
  • 1⅓ c. white chocolate chips

Instructions:
  1. Preheat the oven to 375°F.
  2. Whisk together the flour, cocoa powder, cornstarch, baking soda, and salt; set aside.
  3. Using a hand mixer set on medium, combine the butter, shortening, and sugar until the mixture is pale and fluffy, about 5 minutes. Add the egg and egg yolk, and mix until just combined.
  4. Add the vinegar, vanilla, and food coloring until well blended, and slowly add the dry ingredients to the mixture.
  5. Add the chocolate chips, and mix with a spoon or a spatula. Mold 1½ tablespoons of dough into a round shape, and place on a cookie sheet (without flattening); repeat for each cookie. Bake for 8–9 minutes, and let cool.
