Red Velvet Cookies
These red velvet cookies make for a delicious, rich treat that’s perfect to share with your loved ones.
Makes 36 cookies
Ingredients:
- 2¼ c. flour
- 2½ tbsp. cocoa powder
- 1½ tsp. cornstarch
- 1 tsp. baking soda
- ½ tsp. salt
- 8 tbsp. butter, room temperature
- 6 tbsp. shortening
- 1½ c. sugar
- 1 egg, plus 1 egg yolk
- 1½ tsp. white vinegar
- 1½ tsp. vanilla
- 1 tbsp. red food coloring
- 1⅓ c. white chocolate chips

Instructions:
- Preheat the oven to 375°F.
- Whisk together the flour, cocoa powder, cornstarch, baking soda, and salt; set aside.
- Using a hand mixer set on medium, combine the butter, shortening, and sugar until the mixture is pale and fluffy, about 5 minutes. Add the egg and egg yolk, and mix until just combined.
- Add the vinegar, vanilla, and food coloring until well blended, and slowly add the dry ingredients to the mixture.
- Add the chocolate chips, and mix with a spoon or a spatula. Mold 1½ tablespoons of dough into a round shape, and place on a cookie sheet (without flattening); repeat for each cookie. Bake for 8–9 minutes, and let cool.
