Pretty Pumpkin Rolls

Serves 8

Ingredients:
  • 1½ tsp. dry yeast
  • ⅓ c. plus 1½ tbsp. lukewarm water
  • 10.6 oz. pumpkin puree
  • 3¾ c. all-purpose flour
  • 1 tbsp. extra-virgin olive oil
  • 1½ tsp. salt
  • Pecans, halved

Instructions:
  1. Dissolve the yeast in the water.
  2. In a stand mixer with a hook attachment, add the water-yeast mixture, pumpkin puree, and flour. Once combined, add the oil and salt, and continue to mix until soft and smooth (about 10–15 minutes).
  3. Form the dough into a ball, and cover the bowl with plastic wrap. Set it aside to rise for about an hour.
  4. Shape the dough into nine smaller balls. Tightly wrap a piece of kitchen string several times around each to form grooved lines that resemble a pumpkin.
  5. Place the rolls on a parchment-lined baking sheet, and allow them to rise slightly for another 30 minutes.
  6. Preheat the oven to 355°F. Then bake the rolls for 20–25 minutes or until golden brown.
  7. Remove the rolls from the oven. While still warm, press a pecan half into the top of each roll to resemble a stem. Let cool a bit, and serve.
