Malt and Salt Chocolate Chip Cookies

Makes 24 cookies

Ingredients:
  • 2 c. whole-wheat flour
  • 1½ tsp. baking powder
  • 1½ tsp. cornstarch
  • ½ c. chocolate malted milk powder
  • 8 tbsp. coconut oil, melted
  • 3 egg whites
  • ½ c. plus 2 tbsp. nonfat milk
  • 4 tsp. vanilla extract
  • 1 c. brown sugar
  • ½ c. dark chocolate chips
  • 1 tbsp. flaky sea salt

Instructions:
  1. Preheat the oven to 350°F.
  2. In an electric mixer fitted with a paddle attachment, mix together the flour, baking powder, cornstarch, and malted milk powder until combined. Add in the coconut oil, egg whites, ½ cup milk, vanilla, brown sugar, and chocolate chips, and mix until a dough forms.
  3. Scoop the dough onto a lightly greased, parchment-lined baking sheet, 1 inch apart, and bake for 15–20 minutes or until the cookies are fluffy and cooked completely. Let cool for 15 minutes.
  4. Brush the tops of the cookies with the remaining milk and sprinkle with flaky sea salt before serving. Keep leftover cookies stored in an airtight container in the fridge.
