Loaded Corn-Chip Burritos

Serves 4

Ingredients:
  • 4 large flour tortillas
  • 1 c. chili con carne
  • ½ c. corn kernels
  • ¾ c. refried beans
  • 1 c. cheddar cheese, shredded
  • 1 c. corn chips
  • Olive oil
Optional fillings:
  • 1 jalapeño, sliced
  • ½ c. fresh tomatoes, diced
  • ¼ c. red onion, diced
  • ½ c. lettuce, shredded
  • ¼ c. cilantro, chopped
Garnishes:
  • ¼ c. sour cream
  • Lime wedges

Instructions:
  1. Preheat the grill to medium-high heat.
  2. Working one at a time, fill each tortilla by evenly layering the chili, corn, beans, cheese, corn chips, and fillings of your choosing, leaving room near the edges. Fold the right and left sides, then fold the side closest to you over the top of the ingredients, gently tucking it in. Roll up the burrito tightly away from you to finish.
  3. Set a large skillet or griddle on the grill, and lightly coat it with the olive oil. Place the burritos seam side down, and cook for about 3 minutes or until golden brown. Using a spatula, carefully flip each one over, leaving them for another 3 minutes.
  4. Serve the burritos with the sour cream and, if desired, a squeeze of lime juice.
