Japanese-Style Braised Short Ribs

Serves 4

Ingredients:
  • 1 tbsp. olive oil
  • 3 lb. bone-in beef short ribs
  • 1 c. miso soup
  • 2 c. beef broth
  • ¼ c. mirin cooking wine
  • 4 tbsp. soy sauce
  • 2 c. jasmine rice, cooked
  • 2 nori sheets, cut into squares
  • 2 tbsp. pickled ginger
  • ¼ c. scallions, thinly sliced
  • 1 tsp. wasabi
  • 1 tsp. sesame seeds

Instructions:
  1. Set your slow cooker to low, and heat the oil. Add the short ribs, and sear on all sides for about 10 minutes or until each side is browned.
  2. Add the miso soup, beef broth, cooking wine, and soy sauce. Stir to mix, and cover.
  3. Set the cooker to the slow-cook setting on low for 8 hours or high for 4 hours. When finished, let rest for 5 minutes before serving.
  4. Serve the short ribs with a little of the braising liquid over the rice, and top with the nori, ginger, scallions, wasabi, and sesame seeds.
