Instructions:
- Place a chicken breast between two sheets of plastic wrap, and gently pound it flat with a mallet. Repeat the process with the rest of the chicken breasts. Season the flour with salt and pepper.
- Soak each chicken breast in buttermilk, and dredge in the seasoned flour, tapping away any excess. Set the chicken aside.
- Heat the oil in a large skillet over medium-high heat. Once the oil reaches 325°F, carefully add the chicken to the pan, making sure not to overcrowd. Fry for 10 minutes, flipping once, or until chicken is cooked through and is crispy and golden brown. Let the chicken drain on a baking rack for 5 minutes.
- In a medium bowl, whisk together the hot sauce, honey, and garlic. Dip the chicken into the sauce, coating thoroughly. Return to the baking rack to drain.
- In a large bowl, toss together the cabbage, mayonnaise, dijon mustard, vinegar, and celery seed until thoroughly mixed.
- Top each bun with the chicken, slaw, and pickles before serving.
