Ginger Cookies
These ginger cookies are soft, delicious, and full of the spices that warm us on cold days. They also freeze great, so make an extra batch and save them for a rainy day.
Ingredients:
- 2¼ c. almond flour, tightly packed
- ½ c. coconut sugar
- ½ tsp. baking powder
- ¼ tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. clove
- 2 tsp. ginger
- 3 eggs
- ¼ c. molasses
- ¼ c. coconut oil

Instructions:
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Combine the dry ingredients and break up any clumps in the flour or sugar with a fork.
- In a separate bowl, mix the wet ingredients.
- Slowly stir the wet ingredients into the dry ingredients and mix well.
- Shape the cookies into circles and arrange them on the baking sheet.
- Bake for 12–15 minutes.
- Cool completely and enjoy!
