Croque-monsieur
A classic today in Parisian bakeries which, in 1910, would have been on the menu of Le Bel Âge bistro in the boulevard des Capucines. Written references to this recipe have been found that date from the end of the 19th century, but without the ‘Monsieur’.

- At Delmontel, we make our own organic sandwich bread but you can buy yours at your local baker’s or elsewhere. Carefully remove the crusts from the slices of bread using a serrated knife.
- Make the croque-monsieur topping
Mix the crème fraîche and Gruyère together, seasoning with salt and pepper. Spread the mixture over half the bread slices. Top each with the slices of ham. Spread with another layer of the topping and cover with a second slice of bread. - Assemble
Melt the butter and brush it over the bread slices. Preheat the oven to 350°F and bake for 5 to 10 minutes. Eat with a fresh green salad or cut each croque-monsieur into four and serve with aperitifs.
