Crab Mac and Cheese

Serves 6

Ingredients:
  • 1 lb. macaroni noodles
  • 6 tbsp. unsalted butter
  • ½ c. all-purpose flour
  • 4 c. milk
  • 4 c. Gruyère cheese, grated
  • 2 c. extra sharp cheddar cheese, grated
  • 2 tsp. salt
  • 1 tsp. black pepper
  • 2 pinches of ground nutmeg
  • 1½ lb. cooked crabmeat
  • 1 c. toasted breadcrumbs
  • 4 tsp. fresh thyme, chopped

Instructions:
  1. Preheat the oven to 375°F.
  2. Cook the noodles according to the package instructions, and drain well.
  3. Melt the butter in a large pan over medium heat, add the flour, and simmer, stirring constantly for 1–2 minutes.
  4. Pour in the milk, whisking well until combined. Remove from heat.
  5. Add the pasta, cheeses, salt, pepper, nutmeg, and crab, and stir to coat.
  6. Spoon the mixture into an oven-safe dish, and sprinkle evenly with the breadcrumbs and thyme. Bake for 30–35 minutes or until the top is browned and a bit bubbly. Let cool before serving.
