Grilled Cornbread with Chipotle Honey
This super easy summer side is a delicious addition to any barbecue party. Make sure to serve it with a little extra chipotle-honey butter—it’s just too good!
For the chipotle-honey butter:
- 1 stick salted butter, softened
- ½ c. honey
- 1 tbsp. chipotle peppers in adobo, minced
For the cornbread:
- 1 package cornbread mix, prepared following package instructions
- Scallions, chopped, for garnish

Instructions:
- Preheat grill to medium-high heat.
- In a medium-sized bowl, whisk together the chipotle-honey butter ingredients until blended.
- Cut the baked cornbread into even squares, and brush with the butter mixture. Gently place it on the grill butter side down, and brush the tops with the butter (making sure to reserve some butter for later).
- Grill for 1–2 minutes, and serve with scallions on top.
