Coney Island Potato Packs

Serves 4–6

Ingredients:
  • 4 russet potatoes, sliced lengthwise into wedges
  • 1 tbsp. oil
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 4 hot dogs, sliced into 1-in. pieces
  • 2 c. canned chili without beans
Toppings:
  • 1 yellow onion, diced
  • 2 scallions, chopped
  • 1 c. cheddar cheese, shredded
  • Yellow mustard
  • Ketchup

Instructions:
  1. Preheat the grill to medium-high heat.
  2. Distribute the potato wedges evenly onto four 12-inch sheets of aluminum foil. Drizzle with the oil, and season with the salt and pepper. Fold the long edges of each piece of foil over the potatoes and then the short edges, creating tightly sealed pouches.
  3. Set the foil packets on the grill, close the cover, and cook for about 20–25 minutes or until the potatoes are slightly tender.
  4. Open the packets, and add the hot dog slices to each. Top them evenly with the chili, then reseal the packs. Cover the grill, and cook for an additional 10 minutes or until everything is completely heated.
  5. Remove the packets from the grill, and serve them with the toppings.
