Coconut-Mango Frozen Yogurt Bark

Ingredients:
  • 1 c. low-fat or nonfat Greek yogurt
  • 1 c. coconut milk
  • 4 tbsp. honey or agave
  • ¾ c. fresh mango
  • ½ c. dried mango
  • ½ c. unsweetened toasted coconut flakes
  • ½ c. coconut chips

Instructions:
  1. Whisk together the yogurt, coconut milk, and honey until smooth.
  2.  Scrape the mixture onto a parchment-lined baking sheet, spreading it out evenly. Sprinkle with the fresh mango, dried mango, coconut flakes, and coconut chips.
  3. Freeze for a minimum of 4 hours or until hardened, then break into pieces.

Tips: You can store the bark in the freezer for up to a month—if it lasts that long!
