Chocolate-Dipped Ice Cream Sandwiches

Sandwiches:
  • 12 large chocolate chip cookies
  • 2 c. any flavor ice cream, slightly softened
  • Chocolate chips, sprinkles, or other toppings
Chocolate glaze:
  • 2 c. semisweet chocolate chips
  • 2–3 tbsp. coconut oil

Instructions:
  1. Arrange 6 cookies, bottoms facing up, on a baking sheet lined with parchment paper.
  2. Scoop about ⅓ cup of the ice cream onto each cookie, then top with another cookie and gently press down. Smooth the edges of the ice cream with the back of a spoon, making it even with the cookies.
  3. Place the pan in the freezer for 1–2 hours or until the ice cream has hardened.
  4. Add the chocolate chips and coconut oil to a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until the mixture is smooth and fully melted.
  5. Dip each sandwich halfway into the chocolate, letting the excess drip off, and coat with your desired toppings. Return the sandwiches to the freezer for 10–15 minutes or until the chocolate has hardened.
