Cheesy Apple-Chicken Meat Loaf
Meat loaf:
- 1½ lb. ground chicken
- ¾ c. panko breadcrumbs
- 2 egg whites
- 1 egg
- ½ c. yellow onion, chopped
- ¼ c. celery, chopped
- 1 garlic clove, chopped
- 1 tbsp. Worcestershire sauce
- 1 tsp. salt
- ¼ tsp. black pepper
- ½ c. Fuji apples, diced
- ½ c. Granny Smith apples, diced
- ½ c. Gorgonzola crumbles
Gravy:
- 1 tbsp. butter
- 2 tbsp. flour
- ¼ c. apple-flavored whiskey or brandy
- 1½ c. chicken broth
- 1 tsp. salt
- ½ tsp. fresh sage, chopped

Instructions:

Preheat the oven to 350°F.

In a large bowl, combine the meat loaf ingredients until thoroughly mixed.

Lightly grease a loaf pan with pan-release spray, and fill it with the meat loaf mix, lightly pressing it into the pan to remove any air pockets.

Bake for 45–50 minutes or until the internal temperature reaches 165°F. Let sit for 10 minutes.

While the meat loaf is resting, melt the butter in a medium-sized saucepan over medium-high heat. Whisk in the flour, creating a roux, and pour in the whiskey or brandy. Cook for 3 minutes, whisking frequently. Add the chicken broth and salt, and bring to a simmer. Once the gravy has thickened, add in the sage.

Slice the meat loaf, and serve it with the gravy.
Tip: You can bake the meat loaf mix in muffin tins for individual servings, freezing any leftovers for easy meals. Reheat the mini versions in the oven at 350°F for 25–30 minutes or until their internal temperature reaches 165°F.
