Banana Paleo Pudding

Serves 6

Ingredients:
  • ½ c. honey
  • 2½ c. coconut milk
  • 4 egg yolks
  • ½ c. arrowroot starch, diluted with ¼ c. water
  • 3 ripe bananas, pureed
Garnishes:
  • Banana slices, fresh or dried
  • Coconut whipped topping
  • Crushed nuts of your choosing or nut-free granola
  • Mint sprigs

Instructions:
  1. In a saucepan over moderate heat, whisk together the honey and coconut milk, bringing the mixture to a simmer.
  2. Whisk the egg yolks in a medium bowl until fluffy. Temper them by slowly adding a small amount of the warm coconut mixture, whisking constantly; this will help prevent them from curdling. Pour the tempered yolks into the pot with the rest of the mixture.
  3. Bring the mixture to a simmer, then whisk in the diluted arrowroot, which should thicken it immediately. Once it has, fold in the banana puree. Refrigerate the pudding overnight.
  4. To serve, layer the pudding with your preferred toppings in individual jars, placing the mint sprigs, if desired, on top.
