Flourless Chocolate Cherry Stout Clafoutis
Clafoutis is a French dessert that is part cake, part custard. This recipe uses a grain-free flour alternative as well as dark chocolate, gluten-free stout beer, and fresh cherries. Serve it spooned or sliced—it’s delicious either way.
Serves 6–8
Clafoutis:
- 1 c. almond flour (plus 1 tbsp. reserved)
- ½ c. dark chocolate cocoa powder
- 1 c. sugar
- ½ tsp. salt
- 1 tsp. baking powder
- 3 eggs
- 3 tbsp. butter, melted (plus 1 tbsp. reserved)
- ½ c. gluten-free stout beer
- 1 pint cherries, pitted and split
Garnish:
- Nonfat whipped topping
- Fresh cherries, whole
- Mint sprigs
- Powdered sugar

Instructions:
- Preheat the oven to 350°F.
- In a stand mixer with a whisk attachment, combine the almond flour, cocoa powder, sugar, salt, and baking powder until mixed. Add in the eggs, butter, and beer, and mix until smooth.
- Grease a glass pie pan or casserole dish with the reserved butter, then sprinkle with the reserved flour. Place the cherries on the bottom, and top with the batter.
- Bake for 35–40 minutes or until the clafoutis is puffed and slightly firm.
- Serve with the whipped topping, cherries, mint, and a light sprinkling of powdered sugar.
